Cooking/Baking for the Freezer

I am gearing up for a cooking/baking for the freezer day tomorrow at my mom’s house. I am doing it out there because A. she has a much bigger kitchen B. I will have two ovens available to me since my grandparents have an attached apartment and C. I will have a built in babysitter so hubby can get some studying done for work. I am doing this to stock up my freezer for when baby comes.

Here is what’s on the agenda for tomorrow:

Pumpkin bread

Cranberry Bread

Blueberry Muffins

Runzas

Shepherds Pie.

Next week I am going to be cooking and freezing beans and rice, chili, pasta Bake, and chicken and ground beef. I already have veg/beef stew in the freezer as well as a couple of meals my sis in law sent home with us at thanksgiving. Hopefully this will be enough to get us through the first few weeks!

Menu Plans for this Week

I’m attempting to start meal planning over the next couple of weeks in order to damage control the grocery budget for the month.

Here’s the plan:

This week: 

Mon-Chili

Tues-Rice and Bean burritos

Wed- Chili cheese dip

Thurs-Potato Soup and Grilled cheese

Fri-Taco salad at Parents house

Sat-Dinner at Parents

Sun-Leftovers

  Hopefully I can stick to it. This is one of those tired weeks, but I am determined to get on track with the meal planning!
